For the dressing:
1 Tbsp Botticelli extra virgin olive oil
1 Tbsp Dijon mustard
2 tsp Botticelli balsamic vinegar
1 tsp lemon juice
1 tsp agave or maple syrup (optional)
For the salad:
4 cups kale, shredded
1 avocado, sliced
1 cup strawberries, chopped
1 Tbsp chopped cashews (or your favorite nut or seed)
Salt and pepper, to taste
- Stir dressing ingredients together in a small bowl or cup.
- Place kale in a large bowl. Pour in dressing and use your hands to massage dressing into kale, until it begins to wilt (2-3 minutes).
- Stir in avocado, strawberries and cashews. Transfer to plates and sprinkle with salt and pepper.
