1 Cup All Purpose Flour
1 Cup Almond Flour
1/2 Teaspoon Baking Soda
1 Tablespoon Baking Powder
1/2 Teaspoon Salt
1/4 Cup Light Brown Sugar
1 1/2 Cups Milk
1 Teaspoon Almond or Vanilla Extract
2 Large Eggs
4 Tablespoons Botticelli Extra Virgin Olive Oil
1. In a large mixing bowl, whisk together all of the ingredients until smooth. (It's totally fine if there are a few lumps!)
2. Heat a griddle or heavy skillet over a medium-high flame. Pour about 1/4 cup of the batter onto the skillet and cook until tiny bubbles form on the surface, about 2 minutes. Flip and cook 1-2 minutes more.
3. Note: These can also be made ahead of time and reheated. To reheat in the oven simply preheat the oven to 350 degrees. Place the pancakes in a single layer on a baking sheet and cover tightly with foil. Bake until the pancakes are heated through, about 7-10 minutes. You may also reheat them in the microwave by placing up to 5 pancakes at a time on a microwave safe place and microwaving them for 30-60 seconds depending on wattage.
