Nectarine Salad with Balsamic Vinaigrette

INGREDIENTS

1/2 log goat cheese
- 1 ripe nectarine, sliced
- 1/4 cup toasted walnuts
- 1/4 Botticelli Finishing Extra Virgin Olive Oil
- 1/4 Botticelli Balsamic Vinegar
- 1 tbsp. honey
- 2 tsp. dijon mustard
- 1/4 tsp. salt
- pinch black pepper
PREPARATION
For The Balsamic Vinaigrette:
In a small jar with a lid, add the the evoo, balsamic vinegar, honey, dijon, garlic powder, salt and pepper.
Screw on the lid and shake vigorously to combine.
For The Salad:
Place the arugula in a large bowl.
Top with nectarine slices, toasted walnuts, and goat cheese.
Drizzle on desired amount of vinaigrette, serve and enjoy!
