Veggie Panini with Calabrian Chili Sauce
INGREDIENTS:
- 4 slices of ciabatta
- ¼ cup Botticelli Calabrian Chili Pasta Sauce
- 1 medium zucchini, sliced lengthwise
- 1 small eggplant, sliced lengthwise
- ½ red bell pepper, seeded and quartered.
- ½ red onion, thinly sliced
- 4-6 slices fresh mozzarella cheese, divided
- Fresh basil leaves
- Botticelli Cooking Extra Virgin Olive Oil
- Salt and pepper to taste
PREPARATION:
- Preheat a grill pan to 425F.
- Drizzle the cooking extra virgin olive oil and add the zucchini, eggplant, bell pepper, and onion. Sprinkle with salt and pepper and let grill for 12-15 minutes, flipping halfway. Set aside once soft and charred on the edges.
- Lightly brush the outsides of each slice of ciabatta with the cooking extra virgin olive oil.
- On the inside, spread the Calabrian chili pasta sauce. Then, layer the grilled vegetables and top with the mozzarella slices. Top with fresh basil leaves and close the sandwich.
- Place on a preheated panini press and grill for 3-5 minutes or until the cheese has melted to your liking.
- Remove from the press and let stand for 1-2 minutes. Slice in half on an angle, serve and enjoy!
