Cooking Instructions: Heat sauce gently in a saucepan over medium-high heat for a few minutes. Pour over your favorite pasta. 

Veggie Panini with Calabrian Chili Sauce

INGREDIENTS:

  • 4 slices of ciabatta
  • ¼ cup Botticelli Calabrian Chili Pasta Sauce
  • 1 medium zucchini, sliced lengthwise
  • 1 small eggplant, sliced lengthwise
  • ½ red bell pepper, seeded and quartered.
  • ½ red onion, thinly sliced
  • 4-6 slices fresh mozzarella cheese, divided
  • Fresh basil leaves
  • Botticelli Cooking Extra Virgin Olive Oil
  • Salt and pepper to taste

PREPARATION:

  1. Preheat a grill pan to 425F.
  2. Drizzle the cooking extra virgin olive oil and add the zucchini, eggplant, bell pepper, and onion. Sprinkle with salt and pepper and let grill for 12-15 minutes, flipping halfway. Set aside once soft and charred on the edges.
  3. Lightly brush the outsides of each slice of ciabatta with the cooking extra virgin olive oil.
  4. On the inside, spread the Calabrian chili pasta sauce. Then, layer the grilled vegetables and top with the mozzarella slices. Top with fresh basil leaves and close the sandwich.
  5. Place on a preheated panini press and grill for 3-5 minutes or until the cheese has melted to your liking.
  6. Remove from the press and let stand for 1-2 minutes. Slice in half on an angle, serve and enjoy!
