Caramelized Onion & Pepper Chicken Smash Burgers
INGREDIENTS

1 lb ground chicken
- 1 yellow onion, finely diced
- 1 red bell pepper, finely diced
- 1 large egg
- 1 ½ cup panko breadcrumbs
- 1 tbsp dried oregano
- 1 tbsp dried Italian seasoning
- Salt and pepper to taste
- 2 tbsp Botticelli Cooking Extra Virgin Olive Oil
- Botticelli Frying Olive Oil
- 1 pack of buns
- Sliced mozzarella cheese, or your favorite sliced cheese
PREPARATION
In a medium sauté pan over medium-high heat, pour 2 tbsp cooking extra virgin olive oil. Add in the diced onion and pepper. Stir to combine and bring to a simmer.
Reduce heat if needed, continue stirring occasionally to avoid burning and sauté for 10 minutes or until the vegetables have caramelized nicely.
Once done, pour the vegetables and the leftover oil into a medium mixing bowl. Let cool completely.
Once cooled, add in the ground chicken, egg, oregano, Italian seasoning, salt, and pepper.
Then, add the panko breadcrumbs. Using your hand, sprinkle enough water to lightly moisten the panko breadcrumbs.
Mix thoroughly to ensure everything combines well.
Using your hand roll out about 2 ½ inch meatballs until all of the mixture has been used up.
Preferred cooking method is using a griddle, but a frying pan would work just as well. Heat your griddle or frying pan on medium high heat and spread a light layer of frying olive oil to coat the surface.
For this next step, you’ll need something to smash the burgers. A large firm spatula or a press plate would work perfectly. Another option is to use a plate with a flat bottom. Cover the bottom of the plate with aluminum foil, grease the bottom and press down evenly to smash the burger.
Once hot, place down your meatball (you should hear a sizzle!) and using whatever method of smashing that works best for you, press down until you’ve reached your desired thinness.
Space pending, repeat with more meatballs.
Let cook for 3-4 minutes depending on thinness and then flip to cook the opposite side. Cover the burgers with a slice of cheese.
Remove and repeat until all your burgers are cooked.
Place your burgers in buns, add your favorite toppings, serve and enjoy!
