Antipasto Salad
INGREDIENTS
- 3 cups mixed greens, chopped
- 1 jar Botticelli Italian Antipasto, drained
- ½ cup mini pepperoni
- 8oz Genoa salami, chopped
- 8oz fresh mozzarella balls
- 8oz provolone cheese, cubed
- 1/4 Botticelli Finishing Extra Virgin Olive Oil
- 2 tbsp. lemon juice
- 1 tsp. Italian seasoning
- Salt and pepper to taste
PREPARATION
- In a large mixing bowl, add the mixed greens, Italian Antipasto, pepperonis, salami, mozzarella, and provolone.
- In a shaker bottle, add the olive oil, lemon juice, Italian seasoning, salt and pepper. Shake until frothy and pour into your mixing bowl.
- Mix well to coat everything evenly. Pour out into a decorative serving dish, serve, and enjoy!
