Cherry Pepper Chick Pea Salad
INGREDIENTS
- 1 can (15 oz) chickpeas, drained and rinsed
- 4-6 Botticelli Cherry Peppers, chopped
- 1 small red onion, finely chopped
- 1 cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tbsp. Botticelli Finishing Extra Virgin Olive Oil
- 1 tbsp. red wine vinegar
- 1 tsp. lemon juice
- Salt and pepper to taste
PREPARATION
In a large mixing bowl, combine the chickpeas, chopped cherry peppers, red onion, cucumber, cherry tomatoes, and parsley.
In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, salt, and pepper.
Pour the dressing over the salad ingredients and toss gently to combine. Sprinkle the feta cheese on top.
Let the salad sit for about 15 minutes to allow the flavors to meld or refrigerate for up to an hour.
Serve chilled or at room temperature as a side dish or light lunch.
