Saucy Breakfast Hash with Zucchini

2 medium Yukon Gold potatoes, diced
- 1 medium zucchini, diced
- 1 green bell pepper, diced
- 1 cup Botticelli Sensitive Marinara
- 4 large eggs
- Botticelli Cooking Extra Virgin Olive Oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
PREPARATION
In a large skillet, heat 1-2 tablespoons of olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook for about 10-15 minutes, stirring occasionally, until golden and tender.
Add the diced zucchini and bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are softened.
Pour in the sensitive marinara, stirring to combine. Let it simmer for a few minutes until heated through.
Make four small wells in the hash and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your liking.
Once the eggs are done, remove from heat. Garnish with fresh parsley and any other of your favorite hash toppings. Serve and enjoy!
