Cooking Instructions: Heat sauce gently in a saucepan over medium-high heat for a few minutes. Pour over your favorite pasta.
Easy Gnocchi Bake
INGREDIENTS:
- 2 tbsp. Botticelli Cooking Extra Virgin Olive Oil
- 1 lb uncooked potato gnocchi
- 1 jar Botticelli Tomato & Basil Pasta Sauce
- 2 cups fresh mozzarella, thinly sliced
- ½ lb frozen pearled onions
- 3 cloves garlic, minced
- Fresh parsley, for garnish
- Salt and pepper to taste
PREPARATION:
- Preheat oven to 400F
- In a large heavy-bottom skillet, preferably cast iron, heat 2 tbsp. of Cooking Extra Virgin Olive Oil over medium high heat.
- Add the pearled onions and sauté (caution, you are adding water to a hot pan with oil, reduce heat if needed) for about 15 minutes, stirring every other minute or so.
- Once the onions have thawed a bit and gotten some color, add the minced garlic and sauté for about 2 minutes more.
- Add the Tomato & Basil Sauce and stir to combine.
- Cover with foil and place in the oven to let bake for about 10 to 15 minutes or until onions are tender.
- Once tender, remove from the oven and discard the foil. Carefully add in the gnocchi and stir in to ensure they are all coated.
- Top with the slices of mozzarella and place back into the oven to bake for an additional 15 minutes or until to the cheese is nice and bubbly.
- Once done, remove and let rest for 10 minutes. Top with chopped fresh parsley, serve and enjoy!
