Ghost EVOO Cookies


INGREDIENTS:

For The Cookies:

  • ½ cup Botticelli Baking Extra Virgin Olive Oil⁠
  • ½ cup granulated sugar⁠
  • ½ cup brown sugar, packed⁠
  • 2 large eggs⁠
  • 2 tsp. vanilla extract⁠
  • 1 ¾ cups all-purpose flour⁠
  • ½ tsp. baking soda⁠
  • ½ tsp. baking powder⁠
  • ½ tsp. salt⁠
  • 1 cup semisweet chocolate chips⁠

For The Ghosts:

  • Large marshmallows⁠
  • Melted chocolate or black gel icing (for eyes & mouth)⁠

PREPARATION:

  1. Preheat oven to 350°F. Line a baking sheet with parchment.⁠
  2. In a mixing bowl, whisk together olive oil, sugars, eggs, and vanilla until smooth.⁠
  3. Then, stir in flour, baking soda, baking powder, and salt. Mix until just combined.
  4. Using a rubber spatula, gently fold in chocolate chips just until combined.
  5. Drop heaping tablespoons of dough onto the baking sheet. Bake 9–11 minutes, until golden around edges.⁠
  6. Remove cookies from the oven, gently press one marshmallow into the center of each warm cookie, and return to the oven for 1–2 minutes until slightly puffed.⁠
  7. Melt white chocolate and pipe around the marshmallow⁠
  8. Once cooled, use melted chocolate or black icing to dot on eyes and a spooky little mouth.⁠
