INGREDIENTS:
For The Cookies:
- ½ cup Botticelli Baking Extra Virgin Olive Oil
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 2 large eggs
- 2 tsp. vanilla extract
- 1 ¾ cups all-purpose flour
- ½ tsp. baking soda
- ½ tsp. baking powder
- ½ tsp. salt
- 1 cup semisweet chocolate chips
For The Ghosts:
- Large marshmallows
- Melted chocolate or black gel icing (for eyes & mouth)
PREPARATION:
- Preheat oven to 350°F. Line a baking sheet with parchment.
- In a mixing bowl, whisk together olive oil, sugars, eggs, and vanilla until smooth.
- Then, stir in flour, baking soda, baking powder, and salt. Mix until just combined.
- Using a rubber spatula, gently fold in chocolate chips just until combined.
- Drop heaping tablespoons of dough onto the baking sheet. Bake 9–11 minutes, until golden around edges.
- Remove cookies from the oven, gently press one marshmallow into the center of each warm cookie, and return to the oven for 1–2 minutes until slightly puffed.
- Melt white chocolate and pipe around the marshmallow
- Once cooled, use melted chocolate or black icing to dot on eyes and a spooky little mouth.
