Maple Sweet Potatoes & Carrots

INGREDIENTS

  • 1 large sweet potato
  • 1 lb. carrots
  • 4 cloves garlic, smashed
  • ¼ cup Botticelli Baking Extra Virgin Olive Oil
  • 2 tbsp. maple syrup
  • 2 tsp. fresh thyme
  • 1 tsp. fresh rosemary, chopped
  • Cinnamon
  • Salt and pepper to taste

 

PREPARATION

  1. Preheat the oven to 400F. Peel and cut the sweet potatoes and carrots into 1 in. pieces.
  2. To a large bowl, add the sweet potatoes, carrots, garlic, olive oil, maple syrup, thyme and rosemary. Sprinkle with salt and pepper and toss to coat.
  3. Transfer the veggies to a shallow baking dish and sprinkle with cinnamon.
  4. Bake in the oven for 35-40 minutes, stirring halfway through. The carrots and sweet potatoes should be caramelized and tender when ready. Serve and enjoy!
