INGREDIENTS
- 1 large sweet potato
- 1 lb. carrots
- 4 cloves garlic, smashed
- ¼ cup Botticelli Baking Extra Virgin Olive Oil
- 2 tbsp. maple syrup
- 2 tsp. fresh thyme
- 1 tsp. fresh rosemary, chopped
- Cinnamon
- Salt and pepper to taste
PREPARATION
- Preheat the oven to 400F. Peel and cut the sweet potatoes and carrots into 1 in. pieces.
- To a large bowl, add the sweet potatoes, carrots, garlic, olive oil, maple syrup, thyme and rosemary. Sprinkle with salt and pepper and toss to coat.
- Transfer the veggies to a shallow baking dish and sprinkle with cinnamon.
- Bake in the oven for 35-40 minutes, stirring halfway through. The carrots and sweet potatoes should be caramelized and tender when ready. Serve and enjoy!
