Maple Sweet Potatoes & Carrots

The Perfect Side For The Season

INGREDIENTS

1 large sweet potato

1 lb. carrots

4 cloves garlic, smashed

¼ cup Botticelli Baking Extra Virgin Olive Oil

2 tbsp. maple syrup

2 tsp. fresh thyme

1 tsp. fresh rosemary, chopped

Cinnamon

Salt and pepper to taste

 

PREPARATION

Preheat the oven to 400F. Peel and cut the sweet potatoes and carrots into 1 in. pieces.

To a large bowl, add the sweet potatoes, carrots, garlic, olive oil, maple syrup, thyme and rosemary. Sprinkle with salt and pepper and toss to coat. Transfer the veggies to a shallow baking dish and sprinkle with cinnamon.

Bake in the oven for 35-40 minutes, stirring halfway through. The carrots and sweet potatoes should be caramelized and tender when ready. Serve and enjoy!
