INGREDIENTS:
- 1 cup (230g) pumpkin puree
- 1 egg
- 3 tablespoons brown sugar
- 1 cup (128g) all-purpose flour
- ½ teaspoon salt
- 2 ½ teaspoons baking powder
- Botticelli Chef Select Cooking Extra Virgin Olive Oil
- Cinnamon sugar
PREPARATION:
- Add the pumpkin, egg and brown sugar to a medium bowl and whisk together. Mix in the flour, salt and baking powder. Mix until combined. Let the batter sit while you bring a skillet to medium heat.
- Add some olive oil to the hot skillet (enough to fully cover the bottom). When the oil is hot, scoop some batter into the skillet and let cook until golden and crisp. Flip and press down on the fritters with the back of your spatula. Continue to cook until crisp, 2-3 minutes per side.
- Toss the hot fritters in cinnamon sugar and enjoy!
