Roasted Sweet Potato Hummus

Perfect As A Dip Or Spread

INGREDIENTS

  • 1 can chickpeas, drained but save liquid
  • 1 clove garlic
  • 1 tablespoon of tahini
  • 2 tablespoons lemon juice
  • 1 roasted sweet potato
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon maple syrup to sweeten
  • 1 teaspoon Botticelli Finishing Extra Virgin Olive Oil
  • flakey salt, for garnish
  • roasted pumpkin seeds, for garnish

 

PREPARATION

In a food processor, add chickpeas, 1/4 cup of chickpea liquid from the can, sweet potato, garlic, tahini, lemon juice, salt, cinnamon to a food processor and blend until completely smooth.

Transfer into a serving dish and finish with Botticelli’s Finishing EVOO, sea salt, and roasted pumpkin seeds
