2 Cups of Botticelli Sicilian Eggplant Pasta Sauce
- 1 Pound Rigatoni Pasta
- Shredded Ricotta Salata Cheese
- Chopped Basil for garnish
PREPARATION
In a pot of salted water, cook the Rigatoni pasta to package instructions or until your desired tenderness. Save 3/4 cup of the pasta water and drain. Set aside.
In a large sauté pan on medium-high heat, add the Sicilian Eggplant pasta sauce and your pasta water. Bring to a soft simmer and let cook for 2-3 minutes.
Add in the pasta and stir thoroughly to coat. Once your sauce clings to the pasta well, remove from heat.
Serve each plate with the desired amount of shredded ricotta salata cheese and chopped basil.
TIP:
For larger portions or families, use the whole jar with 2 lbs of pasta!
