INGREDIENTS
- 2 tbsp. Botticelli Cooking Extra Virgin Olive Oil
- 4oz Pancetta, diced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 yellow onion, diced
- 1 jar Botticelli Marinara Pasta Sauce
- 2 cloves garlic, minced
- 14oz chicken broth
- 1 ½ cups ditalini pasta
- 15oz canned cannellini beans, drained and rinsed
- Fresh parsley, coarsely chopped for garnish
- Salt and pepper to taste
PREPARATION
- In a large pot over medium-high heat, add the Cooking Extra Virgin Olive Oil and pancetta. Let sear until nice and crispy on all sides, about 3-4 minutes.
- Next, stirring continuously, add in the carrot, celery, and onion and let sauté for 2 to 3 minutes. Then add the minced garlic and continue sauteing for 2 to 3 more minutes.
- Once the onions are translucent, add the Marinara Pasta Sauce and chicken stock, stir to combine well and reduce to medium heat. Let cook as a soft boil for 20 minutes or until the vegetables are fork tender.
- Once tender, add in the cannellini beans and pasta. Stir to combine and let cook until the pasta is al dente. One minute before removing the pot from heat, stir in the fresh parsley. Taste for any needed salt or pepper, mix in if needed.
- Once done, serve and enjoy with some fresh Italian bread.
RECIPE TIP:
Swap the pancetta for ground beef, Italian sausage, or even make this a vegetarian dish by removing the pancetta!
