Crispy Arancini
Feeds 4-6 People
INGREDIENTS
- 2 cups arborio rice
- 1 cup mozzarella cheese, cut into small cubes
- 1 cup bread crumbs
- 2 eggs, beaten
- ½ cup grated parmesan cheese
- 1 cup Botticelli Spicy Vodka Pasta Sauce
- Botticelli Frying Olive Oil, for frying
- salt and pepper to taste
- fresh basil for garnish
PREPARATION
In a saucepan over medium-high heat, bring 4 cups of water to a boil. Add the arborio rice and stir.
Reduce heat and cover with a lid. Let simmer for approximately 20 minutes or until all the water is absorbed. Set aside and let it completely cool.
Once fully cooled, take a small amount of cooked arborio rice and flatten it in your hand. Place a cube of mozzarella in the center and shape the rice into a ball, ensuring the cheese is enclosed.
In one bowl, place the beaten eggs, in another bowl, combine the Cauliflower Crumbs with the parmesan cheese.
Dip each rice ball into the beaten eggs, ensuring it is well-coated, and then roll it in the Cauliflower Crumb mixture, pressing gently to adhere the crumbs.
Heat the Frying Olive Oil in a pan over medium heat. Fry the arancini until golden brown on all sides. Place them on a paper towel-lined plate to absorb excess oil.
In a small saucepan, heat the Alla Vodka Pasta Sauce.
Serve the arancini hot, with a side of the warmed pasta sauce for dipping. Garnish with basil and serve!
