INGREDIENTS
- 1 1/2 -2 lbs steak, cut into 1 1/2in. thick cubes
- 1 tsp. salt
- 1/2 tsp ground black pepper
- 1/3 cup balsamic vinegar
- 2 tbsp. honey
- 1 tbsp. olive oil
- 1 tsp. Italian seasoning
- 1/2 tsp. garlic powder
- 1 red bell pepper, cut into 1in. pieces
- 1 yellow or red onion, cut into 1in. pieces
- 1 zucchini, cut into 1/2in. slices
PREPARATION
- Season the steak cubes with salt and pepper and set aside in a large bowl. Combine the balsamic vinegar, honey, olive oil, Italian seasoning, and garlic powder in a medium mixing bowl.
- Mix well until smooth. Pour the marinade over the steak, cover and refrigerate for at least 1 hour (or overnight).
- If using wooden skewers, soak in water for 30 minutes before assembling. Make the kabobs by threading on the cubed steak, bell pepper, onion, and zucchini. you should get about 4 pieces of steak per kabob. Season all over with a little bit of salt and pepper, to taste.
- Preheat the oven to 400F. Line a sheet pan with foil and a lightly oiled wire rack. Evenly space the kabobs on the rack and bake for 16-18 minutes. Turn the oven to broil and broil for 1-2 more minutes.
- Alternately, you can grill these kabobs over medium high heat for about 5 minutes on each side or until nicely charred.
