Balsamic Marinated Kabobs

Perfect for the Summer

INGREDIENTS

  • 1 1/2 -2 lbs steak, cut into 1 1/2in. thick cubes
  • 1 tsp. salt
  • 1/2 tsp ground black pepper
  • 1/3 cup balsamic vinegar
  • 2 tbsp. honey
  • 1 tbsp. olive oil
  • 1 tsp. Italian seasoning
  • 1/2 tsp. garlic powder
  • 1 red bell pepper, cut into 1in. pieces
  • 1 yellow or red onion, cut into 1in. pieces
  • 1 zucchini, cut into 1/2in. slices

 

PREPARATION

Season the steak cubes with salt and pepper and set aside in a large bowl. Combine the balsamic vinegar, honey, olive oil, Italian seasoning, and garlic powder in a medium mixing bowl. 

Mix well until smooth. Pour the marinade over the steak, cover and refrigerate for at least 1 hour (or overnight).

If using wooden skewers, soak in water for 30 minutes before assembling. Make the kabobs by threading on the cubed steak, bell pepper, onion, and zucchini. you should get about 4 pieces of steak per kabob. Season all over with a little bit of salt and pepper, to taste.

Preheat the oven to 400F. Line a sheet pan with foil and a lightly oiled wire rack. Evenly space the kabobs on the rack and bake for 16-18 minutes. Turn the oven to broil and broil for 1-2 more minutes.

Alternately, you can grill these kabobs over medium high heat for about 5 minutes on each side or until nicely charred.
