Chicken Parmesan Smash Tacos


INGREDIENTS: 

 

PREPARATION:

  1. In a large bowl, mix the chicken, breadcrumbs, egg, spices, salt, pepper, and parmesan cheese together until well combined. Spread about 1 tbsp. of the chicken onto each tortilla.
  2. Heat some Frying Olive Oil in a shallow pan over medium high. Working in batches, fry the tortillas, chicken side down for 3-4 minutes or until dark and crispy. Flip and spread some spicy vodka sauce onto the chicken. Tear the fresh mozzarella and top with a few pieces. Sprinkle on more parmesan, cover the pan and let cook for a couple of minutes until the cheese has melted.
  3. Add a heaping handful of arugula to a bowl. Squeeze in the lemon juice and drizzle on some Finishing olive oil. Sprinkle with flakey sea salt and toss. Remove the tortillas from the pan and top with the prepared arugula. Fold into tacos and enjoy! 

TIP: 

Swap out the chicken for ground beef for a heartier taco experience!
