INGREDIENTS:
Creamy Balsamic Dressing:
- 1/3 cup Botticelli Balsamic Vinegar
- 1/4 cup Botticelli Finishing Extra Virgin Olive Oil
- 1/3 cup plain Greek yogurt
- 1 tsp. dijon mustard
- 2 tbsp. honey
- 1 tsp. Botticelli Minced Garlic
- 1/2 tsp. Italian seasoning
Pasta Salad:
- Handful fresh baby spinach
- Handful arugula
- 1-2 cups cooked shredded chicken
- 1/2 lb. bowtie pasta, cooked and cooled
- 1 cup sliced strawberries
- 2 avocados, cubed
- 1/3 cup blue cheese crumbles (feta or goat cheese work too)
- 1/2 cup walnut pieces, toasted
PREPARATION:
- Combine all of the dressing ingredients in a jar. Cover and shake vigorously until well combined and creamy.
- In a large bowl, add the bowtie pasta, spinach, arugula, shredded chicken, avocado, strawberries, crumbled cheese, and nuts. Pour the dressing over the pasta salad and toss to combine. Serve immediately, and enjoy!
TIP:
Use an immersion blender to create the ultimate creamy balsamic dressing! You can also make it in bulk and store in the fridge for 3-4 days. Just shake it back up when you're ready to use.
