Hot Honey & Pepperoni Pasta Salad


INGREDIENTS: 

  • 1/4 cup Botticelli Finishing Extra Virgin Olive Oil
  • Excess oil from the cooked pepperoni
  • 1 Roma tomato, grated
  • 1 tbsp. Italian seasoning
  • 1 garlic clove, grated
  • 1/2 tsp. red pepper flakes
  • 1 tbsp. hot honey
  • 1/4 tsp salt
  • 1 lb. orecchiette pasta, cooked and cooled
  • 1 cup mini mozzarella pearls
  • 1 cup mini pepperoni
  • 1 cup cherry tomatoes, halved
  • Handful chopped fresh basil
  • Burrata for garnish

PREPARATION:

  1. Cook your pepperoni & strain the oil and pour into a bowl.
  2. Add the olive oil, grated roma tomato, garlic, Italian seasoning, red pepper flakes, hot honey and salt. Stir well to combine.
  3. In a large bowl, add the cooled pasta, mozzarella pearls, pepperoni, cherry tomatoes and fresh basil. Pour on the dressing and toss. Garnish with burrata and more fresh basil. Drizzle with hot honey and enjoy!
