Nectarine Salad with Balsamic Vinaigrette

Enjoy This Salad All Year Round

INGREDIENTS

1 heaping handful fresh arugula

½ log goat cheese

1 ripe nectarine, sliced

¼ cup toasted walnuts

¼ cup Finishing Extra Virgin Olive Oil

¼ cup Botticelli Balsamic Vinegar

1 tbsp. honey

2 tsp. Dijon mustard

¼ tsp. garlic powder

¼ tsp salt

Pinch of black pepper

 

PREPARATION

Make the balsamic vinaigrette by adding the extra virgin olive oil, balsamic vinegar, honey, Dijon mustard, garlic powder, salt and pepper to a small mason jar, screw on the lid and shake vigorously to combine.

For the salad, place the arugula in a large bowl. Top with nectarine slices, toasted walnuts, and goat cheeses. Drizzle on desired amount of vinaigrette.

The more appealing the dish looks, the more we are inclined to try it! This salad is beautiful enough, but don't forget about the bowl you place it in. Pick your bowl or serving platter accordingly. If you like pops of color, think of a blue platter to contrast against the orange pops of color from the nectarines, or if you like simplicity, perhaps it's a lovely white serving platter with a delicate pattern around the edge.
