INGREDIENTS:
- 1 pound ground beef
- 1 onion, diced
- 6 garlic cloves, minced and divided
- 1 jar Botticelli Spicy Vodka Sauce
- 6 cups beef broth
- 10 lasagna noodles, broken into small pieces
- 1 baguette, sliced into ½” toasts
- ½ cup salted butter, softened and divided
- 2 cups freshly shredded mozzarella
- Salt and pepper to taste
- Fresh parsley, for garnish
PREPARATION:
- Add half of the butter to a large pot over medium heat. Add the onion and cook for a few minutes until soft and fragrant. Add half of the garlic and cook for another minute. Add in the ground beef and cook until browned.
- Pour in the spicy vodka sauce and beef broth; bring to a boil.
- Add in the lasagna noodle pieces and let boil gently until cooked through. Season with salt and pepper to taste.
- Preheat the oven to 400°F. Mix the remaining butter and garlic together in a bowl and spread onto the baguette toasts. Bake for 5 minutes then broil for 2 minutes until browned.
- Portion the soup into oven safe bowls. Top each one with two garlic bread toasts and sprinkle with mozzarella cheese.
- Broil for 2 minutes or until the cheese is bubbly and browned. Garnish with fresh parsley and enjoy!
