Spicy Vodka Lasagna Soup


INGREDIENTS:

  • 1 pound ground beef
  • 1 onion, diced
  • 6 garlic cloves, minced and divided
  • 1 jar Botticelli Spicy Vodka Sauce
  • 6 cups beef broth
  • 10 lasagna noodles, broken into small pieces
  • 1 baguette, sliced into ½” toasts
  • ½ cup salted butter, softened and divided
  • 2 cups freshly shredded mozzarella
  • Salt and pepper to taste
  • Fresh parsley, for garnish

PREPARATION:

  1. Add half of the butter to a large pot over medium heat. Add the onion and cook for a few minutes until soft and fragrant. Add half of the garlic and cook for another minute. Add in the ground beef and cook until browned.
  2. Pour in the spicy vodka sauce and beef broth; bring to a boil.
  3. Add in the lasagna noodle pieces and let boil gently until cooked through. Season with salt and pepper to taste.
  4. Preheat the oven to 400°F. Mix the remaining butter and garlic together in a bowl and spread onto the baguette toasts. Bake for 5 minutes then broil for 2 minutes until browned. 

  5. Portion the soup into oven safe bowls. Top each one with two garlic bread toasts and sprinkle with mozzarella cheese.
  6. Broil for 2 minutes or until the cheese is bubbly and browned. Garnish with fresh parsley and enjoy!
