Chicken, Spinach, & Sun-Dried Tomato Alfredo Casserole

INGREDIENTS
- 16 oz. penne pasta
- 2 cups cooked chicken breast, diced or shredded
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach leaves
- 2 tbsp. Botticelli Minced Garlic
- 1 tbsp. Botticelli Frying Olive Oil
- 1 jar Botticelli Alfredo Sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- salt and pepper to taste
- fresh basil, for garnish
PREPARATION
Preheat the oven to 375F. Grease a 9x13in baking dish with cooking spray or butter.
Bring a large pot of salted water to boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
In a skillet, heat the Olive Oil over medium heat. Add Minced Garlic and cook for 1 minute until fragrant.
Add chopped sun-dried tomatoes and cook for another 2-3 minutes. Add fresh spinach leaves to the skillet and cook until wilted, about 2-3 minutes.
Add cooked chicken breast to the skillet and stir until heated through. Season with salt and pepper to taste.
In the greased baking dish, spread half of the cooked pasta evenly on the bottom.
Spoon half of the chicken, spinach, and sun-dried tomato mixture over the pasta.
Pour half of the Alfredo sauce over the chicken mixture, spreading it evenly.
Sprinkle half of the shredded mozzarella and grated Parmesan cheese over the sauce.
Repeat the layers with the remaining pasta, chicken mixture, Alfredo sauce, and cheeses. Make sure the last layer you add on is cheese.
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Once the casserole is done baking, remove it from the oven and let it cool for a few minutes.
Garnish with fresh basil, before serving. Serve and enjoy!
