Chickpea Salad with Roasted Red Peppers
INGREDIENTS
- 2 cups of cooked orzo, cooled
- 1 jar of Botticelli Roasted Red Peppers, drained and diced
- 1 cucumber, diced
- 8oz mozzarella pearls
- ¼ cup pickled red onion, chopped
- ¼ cup parsley, chopped
- 1 ½ cups of roasted chickpeas
- 4 tbsp. Botticelli Finishing Extra Virgin Olive Oil
- 2 tbsp. Botticelli Balsamic Vinegar
- Salt and pepper to taste
PREPARATION
- In a large mixing bowl, add in the cooked orzo, roasted red peppers, cucumber, mozzarella pearls, pickled red onions, parsley, and chickpeas.
- In a small shaker bottle, add the extra virgin olive oil, balsamic vinegar, salt and pepper and shake until frothy.
- Pour into the mixing bowl and stir to combine well.
- Serve and enjoy!
