Cooking Instructions: Heat sauce gently in a saucepan over medium-high heat for four minutes. Pour over your favorite pasta. 

Vodka Sauce Meatballs on Ricotta Toast

Feeds 4-6 People

INGREDIENTS

Meatball Ingredients: 

  • 1 lb. ground beef
  • 1 egg
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. oregano
  • ½ cup breadcrumbs
  • ½ cup parmesan cheese, grated
  • salt & pepper
  • Botticelli Frying Extra Virgin Olive Oil, for frying
  • Botticelli Alla Vodka Sauce
  • shredded parmesan, for garnish
  • chopped fresh basil, for garnish

Ricotta Toast Ingredients:

  • 1 Baguette, sliced
  • 2 Tbsp. Botticelli Baking Extra Virgin Olive Oil
  • 1 Cup Ricotta Cheese
  • Salt & Pepper
  • Parmesan cheese and fresh basil for topping

 

PREPARATION  

Preheat the oven to 350°F and line a sheet pan with parchment paper.

In a large mixing bowl, add the ground beef, egg, onion powder, garlic powder, oregano, breadcrumbs, parmesan, and salt and pepper. Mix until well combined. Roll out into 14-16 meatballs.

Heat a few tablespoons of extra virgin olive oil in a pan and brown the meatballs on all sides. Remove the meatballs from the pan, scrape the bottom, and add the vodka sauce.

Bring to a simmer. Add the meatballs back into the pan, cover it, and let it simmer for 15 minutes or until the meatballs are cooked through.

While the meatballs are simmering, make the toast by placing the baguette slices on the prepared sheet pan. Drizzle on some extra virgin olive oil and toast in the oven until golden brown.

Spread ricotta cheese on each slice and sprinkle with salt and pepper.

Top each ricotta toast with a saucy meatball. Sprinkle on some parmesan cheese and freshly chopped basil and enjoy!
