Balsamic Roasted Brussels Sprouts with Cranberries & Goat Cheese
INGREDIENTS
- 1 lb. Brussels sprouts, trimmed and halved
- 2 tbsp. Botticelli Baking Extra Virgin Olive Oil
- 3 tbsp. Botticelli Balsamic Vinegar
- 2 tbsp. minced garlic
- ½ cup soft goat cheese, crumbled
- ½ cup dried cranberries
- ¼ cup pecans, chopped
- Salt and pepper, to taste
PREPARATION
Preheat the oven to 400°F.
In a baking dish, evenly toss brussels sprouts with baking extra virgin olive oil, balsamic vinegar, minced garlic, salt, and pepper. Spread them in an even layer across the baking sheet.
Roast for 30 minutes or until the sprouts are tender to your liking.
Remove from the oven when ready and top with the cranberries, pecans, and crumbled goat cheese.
Drizzle with additional balsamic if desired, serve and enjoy!
TIP
This dish is perfectly balanced for sweet and savory flavor palettes but if you prefer a sweeter side dish, replace the regular pecans with candied pecans. These will add more crunch to your dish and boost the sweetness up with every bite.
