Broccolini Salad
INGREDIENTS
- 2 bunches fresh broccolini
- 1 15oz can white beans, drained and rinsed
- ¼ cup Botticelli Finishing Extra Virgin Olive Oil
- ½ large red onion, sliced thin
- 1 lemon, juiced and zested
- 1 garlic clove, minced
- salt and pepper to taste
- grated parmesan for garnish
- crushed red pepper flakes, if desired
PREPARATION
Bring a large pot of salted water to a boil. While the water comes to a boil, prepare an ice bath in a large mixing bowl, and set aside.
Once boiling, add broccolini and cook until tender but crisp, about 2 minutes.
Remove broccolini from the pot and place in the ice bath to stop their cooking process and prevent them from becoming mushy.
Once cooled, drain, pat dry, and chop into bite sized pieces. Add them back to the empty mixing bowl along with the sliced onions and white beans.
In a small mixing bowl, mix together Finishing Extra Virgin Olive Oil, lemon juice, lemon zest, minced garlic, salt, pepper, and red pepper flakes. Pour over the broccolini and mix to combine.
Plate on a serving dish and top with freshly grated parmesan, serve and enjoy!
