HIGH PROTEIN | MEDITERRANEAN DIET
INGREDIENTS:
- 1 jar of Botticelli Traditional Pasta Sauce
- 2 tbsp. Botticelli Cooking Extra Virgin Olive Oil
- 1/4 yellow onion, thinly sliced
- 3 eggs
- Sliced avocado
- Parmesan cheese, for garnish
- Fresh herbs, for garnish
- Crusty bread, for dipping
PREPRATION:
- Add the Cooking Extra Virgin Olive Oil into a small cast iron skillet over medium heat. Then, add the onions, and saute until soft and caramelized.
- Depending on the size of your skillet, add either 1/2 to 1 jar of the Traditional Pasta sauce. Reduce the heat to medium-low and bring to a simmer.
- Crack the eggs into the sauce and cook until the whites are done but yolks are still runny.
- When the eggs are ready, top with sliced avocado, parmesan cheese, and your favorite fresh herbs. Serve immediately with warm crusty bread.
