PREPRATION:

  1. Add the Cooking Extra Virgin Olive Oil into a small cast iron skillet over medium heat. Then, add the onions, and saute until soft and caramelized.
  2. Depending on the size of your skillet, add either 1/2 to 1 jar of the Traditional Pasta sauce. Reduce the heat to medium-low and bring to a simmer.
  3. Crack the eggs into the sauce and cook until the whites are done but yolks are still runny.
  4. When the eggs are ready, top with sliced avocado, parmesan cheese, and your favorite fresh herbs. Serve immediately with warm crusty bread.
