Roasted Garlic Pasta Sauce

Cooking Instructions: Heat sauce gently in a saucepan over medium-high heat for four minutes. Pour over your favorite pasta. 

Vegetarian Roasted Vegetable Lasagna

Feeds 4-6 People

INGREDIENTS

PREPARATION  

Preheat your oven to 375F.

In a large pot of salted water, boil the lasagna noodles until al dente. Strain and place flat on parchment paper to avoid sticking. 

In a large bowl, toss the diced zucchini, peppers, onion, and minced garlic, with the dried basil, oregano, salt, pepper and olive oil until evenly coated.

Spread the seasoned vegetables in a single layer on a baking sheet lined with parchment paper. 

Roast for about 20-25 minutes or until the vegetables are tender and slightly caramelized. Remove from the oven and set aside. 

In a large mixing bowl, combine the ricotta cheese, half of the shredded mozzarella cheese, spinach and salt and pepper. Set aside

In a large 9x13 deep baking dish, spread a thin layer of the Roasted Garlic pasta sauce so your noodles do not stick.

Place enough lasagna noodles to nicely cover the sauce.

Next add an even layer of your cheese mix, followed by a layer of the roasted vegetables. Top that off with some more sauce.

Continue layering your lasagna following this order: noodles, cheese, vegetables, sauce and repeat. 

Once, you've placed the last of your lasagna noodles, spread the last of your sauce. Take the remaining mozzarella cheese and grated parmesan cheese and evenly sprinkle it across the lasagna.

Cover with the lid or aluminum foil and place in the oven for 30 minutes. Remove the lid or aluminum foil and let cook for an additional 10-15 minutes or until cheese is bubbly and golden on top. 

Remove and let cool for 5-10 minutes before slicing. Serve and enjoy!
