Cheesy Raspberry Tart
INGREDIENTS
- 1 puff pastry sheet
- 1 cup fresh raspberries, or raspberry jam for a sweeter tart
- 4oz goat cheese, softened
- 1 egg, for egg wash
- Chopped toasted almonds, for garnish
- Fresh mint leaves, for garnish
- Botticelli Balsamic Glaze
PREPARATION
- Defrost 1 sheet of puff pastry for 40 minutes.
- Preheat oven to 375F.
- Once thawed, roll out and cut into even rectangles.
- Place the puff pastry rectangles onto a lined baking sheet, about an inch apart. Using a bendable spatula, spread a thin layer of the goat cheese onto the middle of each rectangle, leaving about ¼ inch empty on the edges.
- Using a brush, brush the egg wash over the edge of the puff pastry – between the edge of the dough and the goat cheese.
- Place three to four raspberries (or however many fit) on top of the goat cheese. If using jam, use a small teaspoon to spoon and smear the jam on top of the cheese.
- Place the baking sheet into the oven and bake for 15-20 minutes or until the edges are golden brown.
- Once done, remove the baking sheet from the oven and then using a spatula, remove the tarts and place on a wire cooling rack for 5 minutes.
- Once slightly cooled, top with some toasted almonds, a thin drizzle of Balsamic Glaze, and two mint leaves for a pop of freshness and color. Serve and enjoy!
