Balsamic Glazed Fig Crostata With Goat Cheese
Feeds 4-6 People
INGREDIENTS
For The Crostata

1 ¼ cup all-purpose flour
- ½ cup unsalted butter, cubed
- 3 tbsp. water, divided
- 1 large egg
- 1 tbsp. granulated sugar
For The Filling
- 4 oz garlic and herb goat cheese, softened
- ¼ cup ricotta cheese
- 1 large egg
- ¼ cup honey
- Black pepper to taste
- 5-6 fresh figs, sliced thin
- Balsamic Glaze, for drizzling
PREPARATION
Add flour and butter into a large mixing bowl and combine until coarse crumbs remain. Add two tbsp. of water and mix until a thick dough remains.
Shape the dough into a disc and refrigerate for 10 minutes.
Preheat oven to 375F and line a cookie or baking sheet with parchment paper.
In a medium mixing bowl, add the goat cheese, ricotta cheese, egg, honey, and black pepper. Mix well to combine ingredients and set aside.
Roll out the crostata dough into a 12 in. circle onto the lined baking sheet.
Next, spread the cheese filling across the dough in an even layer, reserving 2 in. of dough along the sides. Once filling is spread, fold the 2 in. of dough over the filling to create the “crust.”
Whisk egg with remaining water and brush around the “crust.” Sprinkle with sugar and place into the oven.
Bake crostata for 30-35 minutes or until golden.
Let sit for 5 minutes. Drizzle a spiral of Balsamic Glaze over the crostata, slice, and serve!
